First make sure you have SSH installed it is what gives you the SFTP functionality. Once it is installed your iPhone is now an SFTP server and you now need a client to connect to it.

Install the Mac FTP client Transmit.

Add a favourite for the iPhone using the below details. The password is alpine and use your own iPhones IP address in the Server field. Finally make sure SFTP is the connection type.

Once connected you can browse the files and folders on your iPhone and copy to and from it. If you right click a file and choose "Edit with" then you can edit files on the phone without downloading them. What it actually does is downloads the file to a temporary location and opens it in your chosen editor, and uploads it automatically when you save. This action can be set up to be the double click action which makes it a bit faster to use.
